What is Zurna Dürüm? Meet the 70cm Turkish Kebab in Thailand

It is massive. It is delicious. Find out why the legendary 70-centimeter Zurna Dürüm is taking Patong Beach by storm.

If you visit the vibrant streets of Istanbul or the southern cities of Turkey, you will inevitably see locals standing around street corners, eating massive kebabs wrapped in incredibly thin lavash bread. This legendary street food phenomenon is called Zurna Dürüm, named after a traditional, long, wooden musical instrument.

Size Matters: The Anatomy of a Zurna

A standard wrap or burrito is usually around 20 to 25 centimeters long. A Zurna Dürüm? It clocks in at an impressive 70 centimeters. But it’s not just about length; it’s about the perfect ratio of ingredients.

The magic starts with a special, ultra-thin flatbread (Lavash). Because the bread is so thin, it doesn't overpower the taste of the fillings. Inside this massive canvas, we layer:

  • A generous double portion of thinly sliced, marinated Doner meat (Beef or Chicken).
  • Crispy, golden french fries (a crucial element of the Zurna texture).
  • Freshly chopped tomatoes, lettuce, and onions with sumac.
  • Our secret weapon: A rich, garlicky, slightly spicy tomato-based sauce.

The Toasting Process

What separates a good wrap from a mind-blowing Zurna Dürüm is the final step. Once the 70cm monster is tightly rolled, it is brushed with the natural fat and juices from the rotating Doner spit, and then pressed hard onto a flat iron grill.

This technique ensures the outside of the Lavash becomes incredibly crispy and takes on a beautiful reddish-golden color, while the inside remains steamy, saucy, and juicy.

Can You Finish It Alone?

At El Patrón Kebab, we proudly brought this giant to Thailand. The Zurna has quickly become a fan-favorite among tourists in Phuket. Many groups order it to share, cutting it into slices like a sushi roll. However, if you are coming back from a long night of partying or a tiring day of island hopping, conquering a whole Zurna by yourself is a rite of passage.
